I get super excited when normal gets revamped for impossibly good and that is definitely the case with this bread. I’m not even sure that I should call it a bread after all, there’s no flour to speak of. No milled grain whatsoever. Its just seeds and nuts that get bound together with egg. You could swap out any of the top 3 ingredients for just about any other seed or nut, as long as you chop them to be of equal size. If they’re large and cumbersome, like a whole Brazil Nut, the loaf won’t bind as well so when you cut pieces you’ll have crumbs rather than slices. This loaf is currently featured on our June Flip as the Avo Toast board, with rosemary ricotta, pickled fennel, fresh figs, toasted walnuts and lemon. I also rather like it with goats cheese and jam. It’s pretty good!
Seed and Nut Loaf Recipe
This recipe makes 1 medium loaf tin.
Set your oven to 180 (or 170 degrees Celsius fan forced).
In a bowl combine:
1/2 cup sesame seeds
1/2 cup pepitas (pumpkin seeds)
1 cup sunflower seeds
1 cup almond meal
1/2 cup linseeds
1/2 cup chia seeds
1/2 cup water
1 flat dessertspoon sea salt
Mix well until the mixture thickens and comes together.
Pop into a lined medium loaf tin, sprinkle the top with any seed or nut that takes your fancy, I quite like pepitas, and bake for 1 hour.
Allow to cool completely before slicing into thin pieces.
Seriously! THIN. This loaf is deceivingly filling.
If you’re wanting a vegan loaf, the linseeds and chia seeds do just as good a job binding as the egg. I would double my chia, linseeds and water but grind the linseeds into a meal or buy them ground. The linseeds release a gel much like the chia, that is a brilliant binding agent. This gel is far more accessible and more proteins are released if they’re ground and especially if they’re freshly ground. You can do this in a mortar and pestle or coffee mill. I would also allow the loaf mix to rest, emulsify and soften for at least half an hour before I baked.
Once you’ve made this loaf, it’ll keep re-appearing in different versions at every opportunity and your friends and family with think you’re an absolute genius.
