Our Basic Pancake Recipe

You’ve probably noticed that we LOVE pancakes at The Jam Pantry. Not ordinary run of the mill pancakes though. Each flip they’re laced with something, filled with something and covered in something else. There are no rules, except one.
Maple syrup must ALWAYS be on the side

Here’s our recipe scaled down for your own pancake pleasure.

Grab 2 medium mix bowls and in one, beat the following wet ingredients together:
3 eggs
1/4 cup melted butter
1 1/2 cups milk
1/4 cup yoghurt

In the other bowl sift the following dry ingredients;

1 1/2 cups flour
1/4 cup castor sugar
3 tsp baking powder
a pinch of salt

Make a well in the centre of the dry and add the wet. Beat from the centre out and continue until there are no lumps. You may need a further 1/2 cup of milk if the day is humid.

The beautiful thing about this batter is that the yoghurt reacts with the baking powder and makes them even fluffier than normal.

Fry them up to your own perfect size with oodles of butter in a heavy based saucepan, on medium heat. It’s time to flip the when perfect little bubbles form on the surface of your pancake.

This recipe feeds two ravenous adults or four polite breakfasters and will double and triple exactly.

Remember when deciding on toppings for your morning plate of joy to aways include something acidic, something creamy and something with a crunchy texture then flavour your batter to suit.
